Who remembers the original Los Cabos? The one that Sammy Hagar built, teeming with cruisers and spring-breakers in search of electric-blue shots at Cabo Wabo? Truth is, that Cabo is hard to find in 2019 — if it even exists at all.

The story of the Los Cabos regeneration project dates back to 2014, when Hurricane Odile decimated Cabo San Lucas, leaving behind a clean slate to rebuild. And rebuild they did. They rebuilt everything, until Los Cabos became, without a shred of doubt, the most luxurious beach destination in Mexico.

While you could always find traces of luxury up and down the white beaches of Baja’s southernmost point, never before has there been so much of it. This year alone has seen the opening of a Ritz-Carlton Reserve, Mexico’s first Waldorf-Astoria and the country’s second Four Seasons. But the most recent entrant into the fold is the Nobu Hotel Los Cabos, a production of Chef Nobu Matsuhisa, actor Robert De Niro and producer Meier Teper’s fledgling Nobu Hospitality group.

So what makes Nobu one of Los Cabos’ best resorts? Especially in a place that’s already got enough butler service, gourmet cuisine, private cabanas and yacht culture to please a Roman emperor? In a word: Hollywood. Thanks to the involvement of De Niro and Teper, Nobu Hotels brings with it the kind of glamor and status that will render it the A-Lists’s new Mexican hideaway - one of the best luxury hotels in Cabo - of choice in no time.

Overall score: Extremely Memorable

From service and design to cleanliness, Nobu Los Cabos ranked an Extremely Memorable. Its service and cleanliness both won Best Ever. I don't think I've experienced that level of service, and that level of cleanliness, in a long time. The design won Extremely Memorable because, well, it was. It's very much Japanese minimalist and is absolutely gorgeous. I'm just hesitant to give it a 'Best Ever' because, frankly, there are a lot of hotels out there. As for the Co-Working/Social aspect, I gave it a Pretty Standard. But the truth is, you really aren't coming to Nobu to be social or co-work. You're coming to relax, unplug, and spend some time with someone special.

Overall score: Extremely Memorable

The pool and the location both earned Extremely Memorable marks. There are three pools at Nobu Los Cabos - one for party, one for privacy, and one for adults only. All three each has its own style, and each one does what it's doing extremely well. The beach and beach club both ranked Above Average, but this is only because you can't really use the beaches on this side of Los Cabos. The water is just too rough.

The beds at the Nobu Los Cabos have absolutely earned the Best Ever spot. I am still thinking about those beds. Normally I like a firm mattress, but these cloud-like pods of perfection left me feeling well rested, without any pain, and wanting to linger forever. Outlets were more than abundant, which is Extremely Memorable for me. The A/C was excellent, except that there were a few issues with the door closing properly, which would automatically shut the A/C off. The bathroom was beautifully decorated with a stunning river stone-paved accent wall in the shower, and the amenities were Natura Bisse, which is top of the line.

Overall score: Extremely Memorable

It's a restaurant that partners with Nobu. I mean, how could it be anything less than Extremely Memorable? The other main restaurant is Malibu Farm, which has restaurants all over California and is expanding rapidly. It's known for exceedingly fresh farm-to-table food. The poolside dining is also on point, which is extremely important for me. If you serve amazing restaurant food, but then your poolside food is all microwaved, that definitely says something to me. At Nobu's pool, however, I ate deliciously fresh tuna tostadas and ceviche and could have kept going back for me.

Los Cabos’ Best Resorts: The Wellness

Overall Score: Above Average

I didn't try the spa at Nobu (it was fully booked, which says something), but I did go to the gym. The gym was fine. It was clean, it had treadmills, ellipticals, bikes, and held yoga and other classes. I'm a bit tough to please when it comes to gyms because I like a lot of equipment. This had enough equipment for someone who doesn't keep to a serious regimen when they travel. It just didn't have EVERYTHING I needed.
